3. Nimb Hotel, Copenhagen \u2013 Denmark<\/h2>\n

The hotel\u2019s parent company, Tivoli Gardens, is a certified Green Attraction and home to one of the world\u2019s oldest amusement parks, giving Nimb guests direct access to a wealth of historic attractions. Copenhagen\u2019s<\/a> strong cycling culture and low-emissions ethos is channelled in the hotel\u2019s set of bicycles and electric vehicle fleet, not only encouraging guests to explore the city \u2018like a local\u2019 but also reducing their carbon footprint. One of the three restaurants operated by the Nimb is Gemyse, which translates as \u2018vegetables\u2019, where plant-based plates are served in a greenhouse-style setting within Tivoli Gardens. Chef Andreas Rosenkilde and his team are friendly with local farmers who specialise in organic produce, creating an \u2018Around the Garden\u2019 tasting menu which showcases locally sourced, seasonal
